Dotti Hydue and her husband, Bill Betz, live in rural Morriston on the five acres Bill inherited from his late aunt. Even though Dotti coaxes a large variety of vegetables and herbs from her garden, she admits that gardening in our humid climate and sandy “soil” can be a challenge. Retired from the corporate world, her favorite job was as production assistant for a cookbook publisher. She currently works as a freelance proofreader and writes magazine articles, including several published in Florida Gardening magazine. Her recipe for Cajun Clam Cakes was the winner of Cedar Key’s 7th Annual Cultured Clam Cook-off at the 2010 Clamerica Celebration. She enjoys spending time in the kitchen cooking and baking, gardening, reading, sewing, and exploring Levy County.
